Teaching my friends how to impress his future in-laws.

There are dozens of persian stews, or khoresht, out there but to me fesenjan is the most unique. It’s a pomegranate and walnut stew, sweet and rich but balanced by the sourness of the pomegranate. Here we’re going with duck for that elevated feel, which simmers in that goodness until pull apart tender.

Ingredients1 large onion, finely diced 3 medjool dates 5 oz walnuts 1 pinch saffron 1/4 cup water (for blooming saffron) 1/2 teaspoon turmeric 1/2 teaspoon black pepper 1/3 cup pomegranate molasses 2 duck leg quarters (or chicken leg quarters) 1 cinnamon stick 2 cups water Salt, to taste Pomegranate seeds, to garnish Optional sugar, to taste

High Protein Calzone Edition

This one f*cks.

I swapped the cream cheese for cottage cheese, swapped the ham for chicken, and used low fat mozzarella to bring the calories down without killing the flavour.

Super easy high protein meal that actually f*cks!

👨‍🍳 Ingredients Makes 1 calzone (serves 2)

Filling ✅ Chicken mince, 250g, 8.8oz ✅ Chicken breast 80g, 2.80oz ✅ Cottage cheese, 2 tablespoons, 40g, 1.4oz ✅ Low fat mozzarella, 40g, 1.4oz ✅ 1 tomato sliced ✅ Extra low fat mozzarella for the top, 30g, 1oz

Crumb ✅ Light spray of olive oil or avocado oil ✅ Parmesan powder, 100g, 3.5oz

🔥 How to make it Form the mince into a calzone shape, add the filling, close it up, spray lightly with oil then coat fully in parmesan. Air fry 195 Celsius, 385 Fahrenheit, for 15 minutes.

المكونات:

  • ٥٠٠ جرام صدور دجاج
  • ٣ ملاعق نشا
  • نص كوب ماي ثلج
  • ٣ ملاعق سمن
  • ملح
  • نص ملعقة فلفل اسود
  • نص ملعقة ثوم مطحون
  • نص ملعقة بصل مطحون
  • نص ملعقة كزبره
  • ملعقة بودرة مرق الدجاج
  • ملعقة بابريكا مدخنه
  • ملعقة صغيره فلفل اسود حب
  • ٥ زيتونات

Ingredients:

  • 500 grams chicken breasts

  • 3 tbsp cornstarch

  • 3 tbsps ghee or oil

  • 1/3 cup cold water

  • salt

  • 1/2 tsp black pepper

  • 1/2 garlic powder

  • 1/2 onion powder

  • 1/2 coriander powder

  • 1 tsp chicken stock powder

  • 1 tsp smoked paprika

  • 1 tsp black pepper corn

  • 5 olives

  • blend all the ingredients into a very fine paste. Might take 3-4 minutes.

  • lay the Saran Wrap on the table. Sprinkle the crushed pepper or any spice you want. Rub your hands with oil and place the mixture on the Saran Wrap.

  • roll it into the desired shape tightly. Place it in a pot and steam it for an hour.

  • let it cool to room temperature then place it in the fridge for at least an hour or overnight.

  • slice with a lightly oiled knife and enjoy.
