  • pat dry with paper towel
  • cut through fat and silver skin
  • salt and black pepper
  • sear on both sides in a dutch oven with some oil (medium high)
  • on medium heat: oil, diced onion, celery, carrots sautee
  • red wine
  • diced tomatoes
  • beef broth
  • put the meat back in
  • Drop in a head of garlic, fresh thyme, rosemary
  • bring to a simmer
  • preheat oven to 325 and cook till fall-apart tender (3-3.5 hours)
  • Optional: Throw in carrots and potatos one hour before done
  • prepare fresh parsley, lemon zest, 1 garlic clove
